12/08/2026: The hotel and its history may seem impressive at first: it is a truly iconic place. And yet, once you step through the door, you almost feel at home. The entire team at Marchal shows a kindness that feels genuinely sincere, immediately making you feel welcomed, valued and cared for. In an absolutely magnificent dining room, Mattia and Stefania bring an energy, elegance and warmth that almost make you wish the experience could last longer than just one meal.
On the plate, you will find French cuisine executed with great class, precision and rigour. Michelin-starred restaurants can sometimes be criticised for pursuing originality at all costs, while forgetting that a great traditional dish, when perfectly executed, can be far more difficult to achieve — and ultimately far more satisfying. I have had the chance to try many dishes from the menu over several visits, and I have never been disappointed. Antoine’s pâté en croûte is incredible. The chicken with vin jaune, inspired by Chef Alexander’s family traditions, tells far more than just a story on the plate. The turbot is executed with remarkable precision. Every bite is a pleasure. And the desserts are truly excellent. If you are lucky enough to watch the crêpes Suzette being prepared by the chef or by Stefania, it is a wonderful moment that elevates the experience even further.
Congratulations to everyone both in the dining room and in the kitchen: Mattia, Stefania, Lorenzo, Loïd, Maja, Elisa, Antoine, as well as all those I have not mentioned who contribute to making this such a wonderful family. And above all, congratulations to Chef Alexander for his humility and personality. Despite the level and prestige of this restaurant, he takes the time to connect with his guests, treat them with genuine respect and share his cuisine with a sincerity that can truly be felt.
This is precisely what makes Marchal, in my eyes, so much more than simply a fine-dining experience. It is a restaurant where excellence never creates distance, and where you leave remembering not only the dishes, but also the people who prepared and served them. An experience that, for me, deserves far more than a single Michelin star.
