01/06/2026: Despite being a long-established restaurant, it seems to be relatively unknown due to its location. But I really liked the concept of being able to choose the dishes myself rather than following a fixed tasting menu. The interior and the restaurant itself have a classic, old-fashioned charm, but everything is well maintained and elegant. 27/05/2026: Our dinner at Formel B was an unforgettable, world-class experience. It was a massive double celebration for us: we were marking exactly 25 years together, and earlier that very same day, we got married! When making the reservation, we sent a note explaining the significance of the evening and requested a more secluded table.
From the moment we stepped through the door, the hospitality was flawless. The entire front-of-house team welcomed us on our way to the table, each warmly wishing us a happy anniversary.
The service, spearheaded by our main host and sommelier for the evening, Chris "Half Greek", was outstanding. As our Chef de Rang, he guided us through the night with incredible energy and genuine warmth. He presented each dish and poured every wine pairing with such vivid passion that you felt as though he had personally gathered the ingredients, crafted the food, and was now proudly presenting his creation to us. Chris, we wish you from the bottom of our hearts to always stay this joyful—may your face and eyes always shine with that beautiful smile!
As for the gastronomy—this was our very first Michelin-star experience, and it will certainly not be our last.
The 5-course menu with wine pairing made us feel exactly like we were living a scene from the Disney movie Ratatouille, delivering two incredible, deeply emotional highlights:
1. The "Anton Ego" Pea Flashback
The first moment happened when I tasted a single young pea. It was young and fresh in a way that is hard to put into words. I experienced the exact same sensation as the food critic Anton Ego when he takes his first bite of Remy’s ratatouille: I was instantly transported into a nostalgic, romantic flashback of my childhood. I was back at my grandparents' house, looking at the little garden where my grandmother grew peas and beans. I remembered the exact moment she opened a fresh pod and handed me the raw peas to eat. To evoke such profound, pure emotion through a single ingredient is a testament to true culinary mastery.
2. The Magical Dessert Pairing: Sea buckthorn en surprise
The second unbelievable highlight was the dessert, "Sea buckthorn en surprise", which is indeed their legendary signature dish. Following recommendation from our sommelier, we took a small bite of the dessert and then a sip of the matching wine. It was an extraordinary experience, perfectly mirroring the scene where Remy sees bursts of colors and hears musical rhythms in his head while pairing cheese with a strawberry. The harmony between the dish and the wine pairing was simply incredible.

Everything about the evening was more than extraordinary. We would like to express our deepest gratitude to the entire brigade de salle, the chefs, the sous-chefs, and every person working behind the scenes. Frankly, Formel B deserves even more than its current Michelin star. Thank you from the bottom of our hearts for a magnificent evening. It was the absolute perfect conclusion to our wedding day and our 25th anniversary.
